I love manchego cheese. I love strawberries. And thirdly, I do so love baguette.
A couple of weeks ago, I got the harebrained idea to try mandarin preserves and strawberries on baguette and it was delicious. I decided I should try more things with strawberries since they’re in season, I saw the bit of manchego in my fridge and that was all she wrote!

- sliced baguette
- extra virgin olive oil
- basil, chopped (chiffonade!)
- manchego cheese
- a few strawberries, sliced
- cracked pepper

You’re wondering about the apples, I’ll get to that in a moment.
Set your oven to 375° and while that heats up (mine takes nearly an ice age, but this prep takes less than 5 minutes), slice up the baguette (8 slices made for a solid dinner) and brush with a bit of extra virgin olive oil.
Slice up the basil and manchego. I recommend putting the manchego on top of the basil; it’ll melt over the basil and into the bread, so the basil won’t go slip-sliding everywhere when you bite into the fruit.
Pop the slices on to a baking sheet and into the oven for 5 minutes. Slice your strawberries (not super thin).
After 5 minutes, pull the toast, and top with the strawberries. Return the toast to the oven for another 5 minutes.
Pull the toast, plate it, grind some pepper over the slices: EAT. (:

Alternate: instead of strawberries, try granny smith apples and jamón serrano (or ibérico). Whoa.
The starting point: pasta with tomato-blue cheese sauce.
My version: linguine; added Anaheim chili pepper (my favorite); bell pepper; cheddar instead of blue cheese (gag); and no cream or half-and-half.
Results: I made way too much pasta; I’ll probably use petite tomatoes next time, the whole ones were good, but y’know, a lot; and I bet that’d be pretty good with chicken!
Eggs in a basket is one of those things I keep telling myself I should try, but then I don’t. Until this morning. (:
Lessons learned:
- This size basket, though large relative to the piece of bread, works great
- I like having that bread-guide; yum!
- My bread tastes gooood, but I’ll be experimenting with others.
